Chile con Quesadilla

This is my favorite place to visit when I'm in Brighton. The vibe is great, and the decor is amazing. They are so welcoming and inviting as soon as you walk in and throughout your time there. They are very attentive to every customer. The food here is so delicious and always on point. I highly recommend everyone come in and eat and enjoy conversations with the owners. They are such an amazing family-run restaurant—my favorite place always.

If I could give it 100 stars I would! The place is so clean you could eat off the floor, the employees are super helpful and kind, and the food is so good I don't even have words to describe it with. I am a very picky eater and we ordered almost half the menu and there was not one thing on the table I didn't enjoy. Make sure you wear a belt because this place will blow your pants off!

Dylan was amazing at his job 10/10! He was great interaction and the food was absolutely delicious! Birria ramen was so good and the games here was excellent! Very affordable and amazing workers definitely coming back! Big selection in drinks alcoholic(non alcoholic)

If you have not tried the food offered at Chile con Quesadilla you are missing out. The food is fresh and everything I've tried on the menu is amazing. The chicken tacos are my go to. However, the Birria tacos are over the top and hard to beat. There is something for the entire family. Kiddos enjoy a quesadilla, Mac and cheese. The street corn an beans are the perfect side dish. The best part is they are locally owned and offer fast and friendly service. If you have an event they offer catering or a food truck that is sure to please your guest. Go try them today in Brighton, or in their new Longmont food hall. You will not be disappointed!

This place is really good, service was great, staff was so nice, especially Patricia. We tried a variety of tacos and chile fries, loved them.
